So My mom and I are working on a project -- we are making recipe books -- of our all time favorites. But in the meantime we are willing to test new recipes.
I found these cute books at hallmark -- and so we are starting to put them together -- one recipe a night -- a lame hobby, but if you don't know - I love food. chomp chomp. and it's a good bonding project for me and my mom.
Anyways if you have a tasty recipe I have to try send it to me! Appetizers, cookies, soups whatever.

In a baking dish
-4 chicken breasts
-1 can mexicorn (drained)
-1 can back beans (drained)
-1 can chuncky salsa (drained)
Bake for about 30-40 minutes at 325
Top with shredded cheese cook until melted.
(Also goood with sliced chicken on tortillas) also good made with canned chicken and used over nachos.
3 small perfectly ripe avocados
1/2 a bunch of fresh cilantro finely chopped
1 medium jalapeno
1 lime's fresh squeezed juice
1 vine ripe tomato chopped and juice removed by paper towel
1-2 tablespoons of tastefully simple ci ci cilantro
Mush with fork
Salt to taste
- 1 package oreos
- 1 pkg cream cheese
- 1-2 pkg dark of milk chocolate chips
- 1 pkg white chocolate chips
In food processor crush oreos, them mix in cream cheese. Chill in freezer for 30 minutes then seperate them into balls (a mellon baller works well). Put balls in freezer to chill. Melt Dark or Milk chocolate chips in a double boiler. Dip your frozen balls (heehee) in the chocolate and place on wax paper to cool. Melt white chocolate...using a pastry bag (or ziplock with the corner cut) drizzel white chocolate over truffles.
(They are a pain in the rump but very good)
